Want to get those final points for Valentines Day? Does she like lobster or sea bass? If you answered yes to both of these questions, save the trouble of crazy restaurants and cook for her. You can buy Monkfish at Whole Foods and this fish is very similar lobster... trust me, just try it. If you aren't sure about Monkfish, you can just use the Sea Bass. I chose to use both for this dish.
Let's cook!
Ingredients:
1/2 lb fillet of monkfish, cut into chunks
1/2 lb sea bass, cut into chunks
2 tablespoons olive oil
1 tablespoon unsalted butter
3 shallots, chopped
3 gloves garlic, chopped
handful of grape or cherry tomatoes, cut in half
1/3 cup very finely chopped parsley
1/2 cup white wine
1/2 cup seafood stock
salt and pepper
1/3 cup heavy cream
Step 1:
Place butter and olive oil in a sauté pan over medium heat.
Step 2:
Add shallots and garlic, cooking until they soften.
Step 3:
Add the tomatoes and parsley and cook for 5 minutes.
Step 4:
Add the wine, turn the heat to high, and cook until the wine is cooked down.
Step 5:
Reduce the heat to simmer and add seafood stock.
Step 6:
Here is the size I cut the Monkfish and Sea Bass.
Step 7:
Turn the sauce off after it has simmered for 10 - 15 minutes. Let cool then transfer to a blender.
Step 8:
Return the sauce back the pan and add the heavy cream, stirring well.
Step 9:
Add the chucks of fish and cook covered for 4 minutes on each side.

Remove the fish and place on a dish. Pour the sauce over the fish and sprinkle with parsley. I served my dish with wild rice and peas. Make this dish and if she is a seafood lover, you will score big!
