Keto Pan Creamy Cheesy Chicken over Cauliflower

This is a fantastic chicken dish that takes about 20 minutes and keeps you in ketosis. Really sorry I lost my pictures but next time I make this I will make sure to update the recipe. This is the first of many Keto recipes I will be adding to the site.

Ingredients: 

The Spice Mix
1 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper

The Sauce
1 tablespoon butter
1/2 cup chopped onion (half of one small onion)
1 teaspoon minced garlic
1/4 cup heavy cream
1/3 cup chicken broth
2 ounces cream cheese
1 cup shredded cheddar cheese

The Protein
2 chicken breasts halved. About 1.5 pounds

The Vegi
Half a head of cauliflower.

Step 1: 

Combine the cumin, garlic powder, chili powder, salt and pepper. Set this aside or make extra. This is a good mix just to have around.

Step 2: 

Sear the chicken by heating a medium size skillet over medium heat. Add a tablespoon of cooking olive oil or spray to prevent sticking. Coat the chicken breast with the spice mixture on each side. Sear the chicken in the skillet for 2-3 minutes on each side until nicely browned. Remove the breasts from skillet and set aside.

Step 3: 

Add the butter in the skillet with the onion and garlic and sauté for 3-4 minutes until lightly caramelized. Stir this occasionally to prevent any burning.

Step 4: 

Add the cream, chicken broth, cream cheese and reduce heat to low. You should make sure the mixture is simmering just a little so there is enough heat to melt the cream cheese. Keep stirring until cream cheese melts completely and then add 1/2 cup of the shredded cheese (reserving the other 1/2 cup for later) to the sauce and stir until mixed.

Step 5: 

Steam or boil the cauliflower lightly so it is still a little bit crunchy. Or how you prefer.

Step 6: 

Add the chicken to the skillet and cover with the remaining cheese. Place a lid on the skillet and let simmer over low for 6-10 minutes depending on heat. Again check for light bubbling and you will have it at the perfect temperature.

Step 7: 

Once the chicken and cauliflower are done drain, dry and plate the cauliflower. Place the chicken breast on top and cover both with the sauce in the pan. Pair with a nice wine and have a great meal.
